Market Report - June 10

Well, another rainy Saturday has come to an end and the cooler is stuffed to the brim with vegetables for the Rhinebeck Farmers Market tomorrow.  In addition to all of the goodies we had last week, we will also have beets, parsley, and BIG spring garlic.

I ate some of the beets for lunch this week, and they were delicious!  I halved them, drizzled them with olive oil, and sprinkled them with salt and pepper before roasting them in a 350 degree oven for about a half hour.  So good!

This afternoon when the storms finally passed on by we got a glimpse of a rainbow over our pond.  It was beautiful, and a sign of good luck (and good weather) for the market tomorrow.

  1. Everything looks so good! I've never actually cooked fresh beets. You don't have to peel them? I assumed you did. Let's hope for good weather! See you tomorrow either way!
